Oatmeal 101

Nach reichlich ausprobieren habe ich nun glaube herausgefunden, wie man den perfekten Haferbrei / das perfekte Oatmeal macht - meine Lieblingsmahlzeit zur Zeit. In diesem Post teile ich euch meine Tipps und Tricks, wie man sein Oatmeal-Game auf ein ganz neues Level bringt ;)


Die Basis des Oatmeals bilden natürlich Haferflocken. Ich nehme entweder normale kernige Haferflocken (z.B. von Kölln) oder eine Flockenmischung (z.B. 5-Korn-Flocken von Alnatura). Dazu gebe ich immer noch zartschmelzende Haferflocken hinzu - die machen den Brei wunderbar cremig und breiig. Die sind meiner Meinung nach ein ganz wichtiger Bestandteil eines perfekten Oatmeals. Das Verhältnis sollte ca. 3:2, also 3 Teile kernige und 2 Teile zartschmelzende Haferflocken, sein. Das bleibt aber natürlich jedem selbst überlassen, je nachdem, welche Konsistenz man bevorzugt.

Als Flüssigkeit kann man natürlich alles mögliche verwenden: Wasser, Pflanzenmilch, ja selbst Säfte kann man zur Zubereitung nehmen. Ich mische ganz gern Wasser und Mandelmilch. Wasser wird meiner Erfahrung nach besser von den Haferflocken absorbiert als Milch, wodurch der Brei so "chewy" / fester wird. Mit Milch hingegen wird alles etwas cremiger. Wieviel man nimmt, hängt davon ab, wieviel Haferflocken man verwendet: je mehr Haferflocken, desto mehr Flüssigkeit. Aber eigentlich kann man wirklich so viel Flüssigkeit verwenden, wie man will. Man muss dann halt nur den Brei länger kochen, wenn man mehr Flüssigkeit verwendet. Ich nehme für 50-60 Gramm Haferflocken ca. 350-400 ml Flüssigkeit.

Bei der Zubereitung koche ich immer zuerst die Flüssigkeit auf, bevor ich die Haferflocken hinzugebe. Kocht man nämlich beides zusammen auf, brennt es am Topfboden leicht an - zumindest meiner Erfahrung nach. Ich lasse alles kurz kochen und drehe danach die Temperatur runter und lasse den Brei leicht köcheln. Manchmal gebe ich zwischendurch noch etwas Flüssigkeit hinzu, wenn ich die Konsistenz etwas flüssiger haben möchte. Wenn man will, kann man das ganze natürlich auch in der Mikrowelle zubereiten: Flüssigkeit und Haferflocken in einer Schüssel vermischen, in die Mikrowelle für ein paar Minuten und zwischendurch immer mal wieder umrühren. Bloß aufpassen, dass nichts überläuft  - das passiert bei Oatmeal nämlich sehr gerne...


Ein Geheimtipp: eine Banane beim kochen hinzufügen. Einfach so klein wie möglich schneiden und nach Hälfte der Kochzeit unter die Haferflocken unterrühren. Das gibt dem Brei eine ganz angenehme Süße, etwas mehr Volumen und eine bessere Konsistenz. Wenn mein Oatmeal noch recht flüssig ist, gebe ich einfach die Banane hinzu, wodurch der Brei viel fester und breiiger wird! Ein Oatmeal ohne Banane könnte ich glaube gar nicht mehr essen, weil es alles perfekt abrundet.

Wenn der Brei trotzdem noch nicht die gewünschte Konsistenz erreicht hat, greife ich entweder zu Chiasamen oder Flohsamenschalen. Die dicken den Brei an und absorbieren somit "überflüssige" Flüssigkeit. Man kann auch Leinsamen nehmen, die geben allem noch einen leicht nussigen Geschmack. Einfach ein bisschen einrühren, kurz mit köcheln lassen und dann müsste der Brei auch schnell fertig sein.

Um verschiedene Geschmacksrichtungen zu kreieren, gibt es verschiedene Möglichkeiten. Meist nehme ich Kakaopulver oder so ein "Flavoring System" von My Supps in der Sorte Chocolate Coconut. Danach bin ich wirklich süchtig. Man kann aber auch Puddingpulver untermischen, wodurch der Haferbrei noch eine andere Konsistenz bekommt (bloß darauf achten, dass man da meist mehr Flüssigkeit braucht als normal), sowie Proteinpulver mit Geschmack oder verschiedene Gewürze wie Spekulatius-, Lebkuchen oder Chaigewürz. Das coole an Oatmeal ist, dass man wirklich alles mögliche ausprobieren und kombinieren kann. Die besten Kreationen entstehen, wenn man der Kreativität freien Lauf lässt ;)


Bei den Toppings kann jeder selbst wählen, was er will. Bei mir gehören so gut wie immer Beeren dazu. Blaubeeren mag ich am liebsten - die werden durch den Brei schön warm und dadurch noch fruchtiger und süßer irgendwie. Gerne mag ich auch Trockenfrüchte, Nüsse, Erdnussbutter oder was auch immer das Herz begehrt.

Und hier nochmal mein Rezept:

ZUTATEN:
  • 30-40 g Haferflocken
  • 15-20 g Schmelzflocken
  • ca. 350 ml Flüssigkeit (ich mische Wasser und Mandelmilch)
  • eine Banane
  • 3 g Chocolate-Coconut Flavoring System
  • optional: Oatmeal Spice von Just Spices
  • Toppings - ich habe hier Blaubeeren, Mandeln und Datteln verwendet

ZUBEREITUNG:
  • Die Flüssigkeit in einem Topf aufkochen. Sobald es kocht die Haferflocken, Schmelzflocken, das Flavoring System und das Oatmeal Spice hinzugeben. Kurz alles kochen lassen und dann die Temperatur runterdrehen. Nicht vergessen, zwischendurch immer mal wieder den Brei zu rühren.
  • Während das Oatmeal köchelt, eine Banane in ganz kleine Stücke schneiden.
  • Nach etwa mehr als der Hälfte der Kochzeit die Banane hinzugeben und untermischen.
  • Manchmal gebe ich noch etwas Wasser nachträglich hinzu, wenn der Brei noch nicht die gewünschte Konsistenz erreicht hat, oder auch Flohsamenschalen oder Chiasamen. 
  • Wenn der Brei fertig ist, in eine Schüssel geben und mit Toppings dekorieren - fertig!

After testing out a lot I can finally say that I figured out how to prepare the perfect oatmeal - my favorite meal at the moment. In this post I'm gonna share my tips and tricks how you can bring your oatmeal game to a completely new level ;)



The base of your oatmeal obviously are oats. I normally take either rolled oats or a mixture of different grains (like oats, rice flakes etc.). I always mix them with yield oats flakes - those make your oatmeal extra creamy. In my opinion, they're essential for a perfect oatmeal. The ratio should be ca. 3:2, 3 parts rolled oats and 2 parts yield oats flakes. But of course this depends on which consistency you prefer your oatmeal to be.

For liquid you can use almost anything: water, plant milk or even juice if you want to. I like to mix water an almond milk for my oats. Water is much better absorbed by the oats than milk in my experience which makes the oatmeal more chewy / sticky. However milk makes everything creamier. How much liquid you use depends on how much oats you take: the more oats you use, the more liquid is required. But technically you can use as much liquid as you want; you just have to cook your oatmeal longer if you use a lot of liquid. For 50-60 g of oats I approximately use 350-400 ml.

When preparing my meal, I first cook up the liquid in a pot before I add in the oats. If you bring both things together to a boil, your oatmeal will slightly burn and stick on the bottom of your pot - at least in my experience. I let everything cook for a moment and then turn down the heat and let the mixture simmer. Sometimes I add in a bit more liquid in between if I want the consistency to be a bit more liquidly. If you want to, you can cook your oats in the microwave of course: mix oats and liquid together in a bowl, put it in the microwave for a few minutes and stir occasionally. But be careful as your oatmeal can spill over - has happened to me far too often...



A secret tip: add a banana to your oats while cooking. Just slice a banana into tiny pieces and add it in after half of the cooking time has passed. This will give your oatmeal a nice touch of sweetness as well as more volume and a much better consistency. When my oatmeal is still rather liquidly, I just add in the banana which will magically make my oats more sticky! I think I couldn't have an oatmeal without banana anymore as it tastes a million times better this way.


If my porridge hasn't reached my desired consistency yet, I either add in some chia seeds or psyllium husks. They will thicken up your oatmeal and absorb the rest of the liquid. You can also use flaxseeds which will give your oatmeal a nutty taste as well. Just stir them in a little, let everything simmer a bit and then your oatmeal should be ready to eat.

There are a lot of ways to flavour your oats. I almost always use cocoa powder or a "Flavoring System" from My Supps in "Chocolate-Coconut". I'm really addicted to that. You can also mix in some pudding powder, but it will slightly change the consistency of your oatmeal (just be aware that if you use pudding powder, you'll need more water than usual to prepare your porridge), flavored protein powder or different spices like speculoos, gingerbread or chai spice. The cool thing about oatmeal is that you can experiment so much with the flavors and different combinations. The more creative you get, the better the outcome will be ;)



For toppings you can choose whatever you want. I personally always need some berries on my oats. Blueberries are my favorite - they'll become warm when you put them on your hot oatmeal and become even more fruity and sweet. I also like dried fruits, nuts, peanut butter or whatever my heart desires.

And here's the recipe for my basic oatmeal:

 INGREDIENTS:
  • 30-40 g oats
  • 15-20 g yield oats flakes
  • ca. 350 ml liquid (I mix almond milk and water)
  • one banana
  • 3 g Chocolate-Coconut Flavoring System
  • optional: Oatmeal Spice from Just Spices
  • toppings - I use blueberries, almonds and dates
METHOD:
  • Heat up your liquid in a pot. When it cooks, add in oats, yield oats flakes, Flavoring System and Oatmeal Spice. Let everything cook for a short bit and and then turn down the heat. Don't forget to stir your oatmeal from time to time!
  • While your oatmeal is simmering, chop up a banana into tiny pieces.
  • After more than half of the cooking time, add in the chopped banana and mix well.
  • Sometimes I add in some more water if the consistency isn't perfect yet, or I add in psyllium husks or chia seeds.
  • When the oatmeal is done, put it in a bowl and top it with your toppings - enjoy!

Rezept: Spekulatius Grießbrei / Recipe: Speculoos Semolina Porridge

Auch wenn Weihnachten und die Zeit für Spekulatius eigentlich schon vorbei ist, möchte ich euch nicht mein Rezept für Spekulatius Grießbrei vorenthalten! Es ist wirklich super einfach und schnell zu machen und schmeckt dazu noch sehr lecker.

Even though Christmas and the time to eat speculoos cookies is over, I still want to share my recipe for speculoos semolina porridge with you! It's really easy and fast to make and also super delicious.


Grießbrei mochte ich früher als Kind immer sehr gerne. Vor allem die aus den Babygläsern fand ich sehr oft gegessen. Zum selber machen war ich meist zu faul, obwohl ich ja jetzt weiß, dass es eigentlich keiner großen Arbeit bedarf, um welchen zuzubereiten. Einfach Grieß in etwas Flüssigkeit aufkochen, gut umrühren und kurz ziehen lassen. Das umrühren ist dabei wirklich wichtig! Ich empfehle, zum umrühren einen Schneebesen zu nehmen, damit keine Klumpen entstehen - das war bei mir nämlich der Fall, als ich zu ersten Mal Grießbrei gekocht habe und dabei einen Löffel zum rühren genutzt habe.

As a child, I used to love semolina porridge. Especially the ones for babies that come in little jars. I was mostly too lazy to make my own, although I know now that it doesn't make a lot of effort to cook some. Just cook semolina in some type of liquid, stir well and let it sit for a few minutes. Stirring it well is really important as I've found out! I suggest using a whisk for stirring so that no clumps form - that happened the first time I cooked semolina porridge when I used a spoon to stir the porridge.


Grießbrei kann man genauso variieren wie Haferbrei: mit Kakao, Vanille, reichlich Früchten oder halt mit Spekulatius Gewürz. Auf Instagram haben zur Weihnachtszeit viele ihren Haferbrei mit dem Gewürz verfeinert, weswegen ich es dann auch mal ausprobieren wollte. Als ich auf dem Weihnachtsmarkt war, habe ich einen Stand von Just Spices entdeckt, die neben viele exotischen Gewürzmischungen auch Spekulatius Gewürz verkauften. Das kam bei mir gleich mit, genauso wie das Milchreis Gewürz, welches auch sehr gut zu dem Spekulatius Grießbrei passt. Kann beides sehr empfehlen!

Semolina porridge can be varied just like oatmeal: with cacao, vanilla, some fruits or with speculoos spice. On Instagram, I saw a lot of people around Christmas time making speculoos oats, and that's why I wanted to make some as well. When I was on the Christmas market in December, I came across a market stand from Just Spices; they sold a lot of different mixed spices, like their speculoos spice. I bought this one as well as the milk rice spice, which matches perfectly in this porridge. I can really recommend both of them!

ZUTATEN / INGREDIENTS:
  • 50 g Grieß / 50 g semolina
  • 300-400 ml Flüssigkeit (Pflanzendrink oder Wasser, gerne auch gemischt) / 300-400 ml liquid (plant milk or water, can also be mixed together)
  • eine Banane, in kleine Scheiben geschnitten / one banana, sliced
  • ca. 1/2 TL Spekulatius Gewürz (optional: mit dem Milchreis Gewürz von Just Spices vermischen) / about 1/2 tsp speculoos spice (optional: mix with the milk rice spice)
  • Toppings eurer Wahl, z.B. Blaubeeren, Nüsse, Datteln oder Spekulatius Kekse / toppings of choice, for example blueberries, nuts, dates or speculoos cookies
ZUBEREITUNG / METHOD:
  • Die Flüssigkeit in einem Topf aufkochen lassen. Sobald es kocht, den Grieß und die Gewürze langsam unter ständigem rühren hinzugeben und die Temperatur runterschalten. / Heat up the liquid in a pot. When it starts to cook, add in the semolina and the spices while stirring continuously. Lower down the heat.
  • Wenn der Brei etwas fester geworden ist, die zerschnittene Banane hinzugeben und verrühren. / When your porridge hets a bit more firm, add in the sliced banana and mix everything together.
  • Sobald die gewünschte Konsistenz erreicht ist, den Brei in eine Schüssel geben und anschließend mit den Toppings dekorieren. / As soon as the desired consistency has been reached, put your porridge in a bowl and top it with whatever you like.
Der Brei schmeckt wirklich lecker und ich würde mich freuen, wenn ihr das Rezept auch mal ausprobiert!

Meine Lieblings-Bowl zum Frühstück

Welche ist eure liebste Mahlzeit des Tages? Meine ist glaube das Frühstück. Kaum zu glauben, da ich jahrelang ein Frühstücksmuffel war. Doch wie mittlerweile bestimmt jeder weiß, sollte man nie das Frühstück ausfallen lassen, denn es liefert uns die nötige Energie, um gut in den Tag zu starten.

What is your favorite meal of the day? I think mine would be breakfast. Hard to believe as I've been a breakfast hater for years. But as everybody most probably knows, you should never skip breakfast as it provides you with much needed energy to start your day right.


Seit bestimmt anderthalb Jahren nun schon habe ich ein ganz bestimmtes Lieblingsfrühstück: eine Bowl bestehend aus einem klein geschnittenen Apfel, Sojajoghurt, Trockenfrüchten, Müsli, Cornflakes und allerlei anderen Leckereien. Es hat etwas gedauert, bis ich die perfekte Kombination für meine Bowl herausgefunden habe. So bestand sie anfangs noch as einem kleinen Klecks Joghurt mit ein bisschen Apfel vermischt und einem *Hauch* von Müsli - viel zu wenig, wie ich später eingesehen habe. Ursprünglich entstand nämlich diese Bowl während meiner schlimmsten Abnehmphasen und ich habe sie gehasst, eben weil nur so wenig drin war und es viel zu lasch geschmeckt hat. Dank meiner Ernährungsberaterin habe ich dann die Menge meiner Bowl erhöht und immer mehr an weiteren gesunden Zutaten hinzugefügt, sodass dieses Gericht zu meiner absoluten Lieblingsmahlzeit geworden ist.

Since maybe one and a half years now I've been having a specific meal for breakfast: a bowl consisting of an apple cut in small chunks, soy yoghurt, dried fruits, muesli, corn flakes and other stuff. It took some time until I've finally figured out the perfect combination for my bowl. At first it consisted of a tiny blob of yoghurt mixed with a very small apple and a *hint* of muesli - far too little as I've later realized. Originally this bowl was developed in my worst phases of restricting and I hated them simply because there wasn't much inside the bowl and it's taste was far too boring. Thanks to my nutritionist I increased the amount of the ingredients in this bowl and more and more other healthy stuff was added to it, so that this bowl became one of my most favorite meals ever.

Mittlerweile esse ich die Bowl wirklich täglich - selten gibt es einen Tag, an dem ich etwas anderes bevorzuge. Sie schmeckt nicht nur gut, sondern ist dazu noch gesund, vor allem der Verdauung tut sie dank des Apfels, des Joghurts, der Flohsamenschalen und dem Müsli gut. Die Kombination mag zunächst gewöhnungsbedürftig klingen, doch wenn man sich an die richtigen Mengenverhältnisse hält, wird die Bowl himmlisch lecker, vor allem wenn man nicht mit dem Müsli und den Cornflakes spart. Das Geheimnis dabei ist, nicht zu viel Joghurt zu nehmen, sondern nur so viel, dass die Apfelstücken gut bedeckt sind. Auch die Reihenfolge, wie man die einzelnen Komponenten miteinander vermischt, ist von Bedeutung. Wenn man nämlich zuerst Cornflakes, Müsli und Joghurt zusammen mischt, nehmen diese die ganze Feuchtigkeit auf, sodass gar nichts an den Apfelstücken haften bleibt und die Cornflakes sehr labbrig werden. Man merkt, wie sehr ich mich damit beschäftigt habe, stimmt's?

Nowadays I eat this bowl almost every day - seldom there's a day I prefer something else. It doesn't only taste good but is healthy as well and aids your digestion because of the apple, yoghurt, psyllium husks and muesli. The combination may sound weird at first, but if you use the right amounts the bowl will taste heavenly great, especially if you don't hesitate to use a lot of muesli and corn flakes. The secret to it is to not use a lot of yoghurt but just enough so that the apple cubes are coated. As well the order in which you mix the ingredients together plays an important role: if you mix corn flakes, muesli and the yoghurt first, they will soak in all the yoghurt so that almost nothing sticks to the apple cubes and the corn flakes become very soggy. You can see that I've put in a lot of time to figure out this recipe, right?

Das Rezept - wenn man es denn wirklich ein Rezept, wo doch nur ein paar Dinge in einer Schüssel miteinander vermischt werden - ist natürlich sehr wandelbar. Man kann zum Beispiel einen Joghurt mit Geschmack nehmen, wie Kokosnussjoghurt, was ich sehr empfehlen kann! Und wer will, kann auch noch andere (Trocken-) Früchte hinzugeben oder die Bowl mit ein paar leckeren Nüssen toppen, für ein bisschen mehr Crunch. Es ist sehr vielfältig, was ein weiterer Grund dafür ist, warum ich dieses Gericht so sehr liebe :)

The recipe - if you can call it a recipe as it is simply putting some things together in a bowl and mixing them together - can be varied in so many ways. You can as an example use a flavored yoghurt, like coconut yoghurt which I can really recommend! And who wants can as well put more (dried) fruits to the bowl or top it with some delicious nuts, for a some extra crunch. It's so diverse, which is an additional reason why I love this meal so much :)

ZUTATEN / INGREDIENTS:
  • ein Apfel / an apple
  • eine getrocknete Pflaume / one dried plum
  • ca. 100 g Sojajoghurt Natur (oder je nach Größe des Apfels anpassen) / ca. 100 g soy yoghurt (or adjust amount to size of the apple)
  • ein EL Leinsamen / one tbsp of flaxseed
  • ein TL Flohsamenschalen / one tsp of psyllium husks
  • 50 g Müsli und Cornflakes gemischt / 50 g of muesli and corn flakes, mixed




ZUBEREITUNG / METHOD:
  • Zuerst den Apfel in ganz kleine Würfel schneiden. In eine Schüssel geben und eine klein geschnittene Trockenpflaume hinzufügen. / First slice the apple into small cubes. Put into a bowl and add a chopped dried plum.
  • Dann den Sojajoghurt dazugeben sowie die Lein- und Flohsamenschalen. Alles miteinander vermischen. / Then add the soy yoghurt as well as the flaxseed and the psyllium husks. Mix everything together.
  • Zum Schluss nur noch mit dem Müsli und den Cornflakes toppen - fertig! / Finally, top your bowl with muesli and corn flakes - done!
So ein leckeres und einfaches Gericht, auch wenn es am Anfang noch sehr ungewöhnlich klingen mag. Außerdem eignet es sich auch perfekt für unterwegs, für die Schule oder für die Arbeit. Lasst es euch schmecken :)

Chocolate Banana Oatmeal

Now let me tell you that there were times I've hated Oats - they tasted so bland to me and were more complicated to make than just putting cereal in a bowl. But I've figured out an easy recipe for oatmeal that I eat daily at the moment. I've fallen in love with oatmeal again and can't imagine how I lived without it the past years.



Everything that is in that oatmeal are oats (of course), banana, some liquid (I mix water and almond milk) and a flavoring system from My Supps (either chocolate-coconut or chocolate-cookie). I like to top my oats with the salty caramel coconut chips from Veganz, some berries and a splash of almond milk. Trust me when I say that topping your oats with a splash of plant milk will totally change your oatmeal game.

I cook my oatmeal in the microwave. It's so much easier than cooking it on the stove and it has a different consistency in some way - a better one in my opinion. At first it was difficult to find out how long and at which temperature to cook it, but after some experimenting I figured out a perfect way to do it. Your microwave might be different, so you may cook it longer or at a higher temperature - just experiment a little and always watch what's going on with your oatmeal in the microwave because it can easily overflow. And don't forget to stir it a few times in the cooking process! This will make sure that the oatmeal gets creamier.

And of course this recipe is completely vegan and delicious!

INGREDIENTS: 
  • 50g oats (either rolled or quick cooking)
  • either water, plant milk or both
  • ca. 1,5-2 tsp cocoa powder or a flavoring system with chocolate taste (adjust amount to your liking)
  • one banana
  • toppings, for example fruit, berries, nuts, coconut flakes, chia seeds, ...
METHOD:
  • Put the oats and the cocoa powder in a microwave safe bowl and stir the ingredients together
  • Add your liquid. The oats should be covered completely with your liquid. The amount you put in depends on how you want the consistency to come out, so if you want it sticky, add less and if you want it soggy, add more liquid. Stir again.
  • Now put the oats in the microwave for around 2 minutes on full power. Stir halfway through.
  • Meanwhile, slice your banana into tiny chunks. Add to your oats and put it back in the microwave for 30 seconds.
  • Let the oats sit for 2 to 3 minutes. Afterwards, put the oatmeal back in the microwave on lower heat for 2 minutes.
  • Top your oatmeal with your toppings and ENJOY!

Ich weiß noch, wie ich mir am Anfang meiner Genesung so viele Gedanken darum gemacht habe, wieviel man essen sollte, um gesund zu werden. Tä...
